Lithuanian Kugelis in a cast iron pan
Yields1 Serving
 1 lb Bacon
 1 Large Sweet Onion
 6 Eggs
 1 Can of Evaporated Milk
 ½ cup Milk
 3 lbs Yukon Gold Potatoes, Peeled
 Salt And Pepper, To Taste

Saute bacon and onion until golden and lightly crispy.

While that is cooking, shred the potatoes, either by hand or food processor using grated blade. Add to a food processor with the regular blade and puree.

In batches using cheesecloth, pour the mixture into cheesecloth and squeeze as much water as possible over a large bowl, then place dried potatoes into a separate bowl.

When finished, take the bowl full of water from the potatoes and strain off the water, leaving the thick starch in the bottom of the bowl.

Add the starch to the potato mixture. Add the bacon and onion, along with eggs and the rest of the ingredients to the potatoes.

Season with salt and pepper to taste.

Pour into a greased or buttered 9"x13" baking dish and bake at 350 degrees Fahrenheit for 60-90 minutes, until golden brown and it is firm. Enjoy!
