March is here, and although it may still be cold in Chicago, spring is just around the corner. Soon the flowers will bloom, we'll shed our large winter coats, and begin celebrating all that the season has to offer. First up is that holiday that brings along some great Chicagoland traditions—none other than St. Patrick’s Day! Whether you're celebrating at home with the family or heading to a party, this Reuben dip is the perfect St. Paddy’s appetizer!
This Reuben dip is great for entertaining a crowd or just as a snack for the family. With the classic flavors of a Reuben sandwich, it's sure to amaze your taste buds and leave everyone's bellies full!
For our recipe, we used the Breville Smart Oven Air Toaster Oven, which worked wonders. It took no time to preheat, cooked just like a regular oven, and (the best part) took less time to cook than in a conventional oven! The Breville Smart Oven toaster oven is amazing, and using it made me wonder how I have been living without one. Toaster ovens, in general, are great for toasting, re-heating (instead of using a microwave), and even baking. This model can fit a regular 13 x 9 baking dish, a 12 cup muffin tray, or 9 slices of toast—perfect for baking a small dish or acting as a second oven when hosting Thanksgiving or large dinner parties.
Serve the dip warm, with your favorite crackers or bread. We chose to pair it with our Soft Pretzel Bites recipe. Enjoy!
Set your toaster oven to the "Bake" setting. Pre-heat for 400 degrees F.
In a large mixing bowl combine: diced corned beef, swiss cheese, sauerkraut, mayonnaise, thousand island dressing, salt, and pepper. Stir together with a spatula until mixed well.
Pour dip mixture into a casserole dish or large pie pan. Bake in your toaster oven for 20 to 25 minutes or until dip is bubbly and cheese is browned.
Serve with your soft pretzel bites or favorite crackers/bread. Enjoy!
