S’mores Ice Cream Sandwiches

Honey Graham Cracker Cookies
 ¾ cup unsalted butter, softened
 ¾ cup sugar
 ½ cup dark brown sugar
 ¼ cup honey
 2 ½ cups all-purpose flour
 1 ½ tsp baking powder
 ½ tsp baking soda
 ½ tsp salt
 1 tsp cinnamon
 1 tsp vanilla
 1 egg

 ¼ cup sugar
 ¼ tsp cinnamon

 16 oz heavy whipping cream
 14 oz can of sweetened condensed milk
 1 tsp vanilla
 1 cup mini chocolate chips
 1 package marshmallows, toasted

Preheat oven to 375 Degrees and line a baking sheet with parchment paper.

In the bowl of a stand mixer, cream together butter, sugar, brown sugar, and honey.

In a separate mixing bowl, add flour, baking powder, baking soda, cinnamon, and salt. Whisk dry mixture until combined.

Once wet mixture is creamed together, add the egg and vanilla. When mixed thoroughly, slowly add in the dry mixture—1/3 of it at a time, until they are completely combined. This is your cookie dough.

In a small bowl, add 1/4 cup sugar and 1/4 teaspoon cinnamon, and mix together. Form cookie dough into balls and roll in sugar and cinnamon mixture.

Place cookie dough balls on the prepared cookie sheet.

Bake for about 12 minutes, or until the cookies are golden brown. Allow the cookies to cool on the sheet for a few minutes and transfer to a cooling rack to cool completely.

Toasted Marshmallow Ice Cream

Toast your marshmallows, either in your broiler or on the stovetop.

In the bowl of a stand mixer fitted with the whisk attachment, add heavy whipping cream. Start speed on low and increase speed once it starts to foam. Whip until soft peaks form.

Slowly add in the sweetened condensed milk, and gently fold in with a spatula. Add the vanilla in the same way as the condensed milk.

Add your toasted marshmallows and mini chocolate chips. Pour mixture into a 9 x 5 inch loaf pan and cover with aluminum foil.

Place in freezer until hard.

Once cookies have cooled and ice cream has frozen, assemble your sandwiches!

Grab two cookies and use an ice cream scoop to scoop out your ice cream and place on top of your cookie. Add as much ice cream as desired. Squish another cookie on top and enjoy!

Make sure to keep an eye on the marshmallows while in the broiler, we don't want them to be too burnt.
