We're a couple days into summer right now, and while the weather around here hasn't really been cooperating, that doesn't mean we're not going to be eating like it's 90° outside. And that means, yes, its time to start consuming copious amounts of ice cream. We're under no delusion that ice cream is good for you—though there are now plenty of tasty low-cal versions in the grocery store freezer section—but that doesn't mean you can't make some good-for-you-ish choices when downing a frozen confection.
One of the ways you can do that is by making your own ice cream! That might like a monumental task, but as this S'mores Ice Cream Sandwich recipes shows, it's actually pretty straightforward. You don't even need a fancy ice maker—a regular stand mixer will do. In addition to being a great learning experience and a chance for the kids to help, making your own ice cream ensures that you know exactly what's going in it: Milk, cream, sugar, vanilla, and other things that you can pronounce. No diglycerides, no stabilizers, no titanium dioxide, and no ambiguously-named "natural flavoring." So grab your kitchen helper and let's get started.
Preheat oven to 375 Degrees and line a baking sheet with parchment paper.
In the bowl of a stand mixer, cream together butter, sugar, brown sugar, and honey.
In a separate mixing bowl, add flour, baking powder, baking soda, cinnamon, and salt. Whisk dry mixture until combined.
Once wet mixture is creamed together, add the egg and vanilla. When mixed thoroughly, slowly add in the dry mixture—1/3 of it at a time, until they are completely combined. This is your cookie dough.
In a small bowl, add 1/4 cup sugar and 1/4 teaspoon cinnamon, and mix together. Form cookie dough into balls and roll in sugar and cinnamon mixture.
Place cookie dough balls on the prepared cookie sheet.
Bake for about 12 minutes, or until the cookies are golden brown. Allow the cookies to cool on the sheet for a few minutes and transfer to a cooling rack to cool completely.
Toast your marshmallows, either in your broiler or on the stovetop.
In the bowl of a stand mixer fitted with the whisk attachment, add heavy whipping cream. Start speed on low and increase speed once it starts to foam. Whip until soft peaks form.
Slowly add in the sweetened condensed milk, and gently fold in with a spatula. Add the vanilla in the same way as the condensed milk.
Add your toasted marshmallows and mini chocolate chips. Pour mixture into a 9 x 5 inch loaf pan and cover with aluminum foil.
Place in freezer until hard.
Once cookies have cooled and ice cream has frozen, assemble your sandwiches!
Grab two cookies and use an ice cream scoop to scoop out your ice cream and place on top of your cookie. Add as much ice cream as desired. Squish another cookie on top and enjoy!
