Remove the membrane from the back of each rib rack. Drizzle each rack with olive oil, then sprinkle your BBQ rub on top.
Once your smoker is heated to 250 degrees, place your ribs on a rib rack. Place the smoker lid back on and cook for 5 hours.
After 5 hours, brush your BBQ sauce on top of your ribs. Sauce liberally on the top of the rack so the sauce with gradually roll down the side. Put the lid back on and allow the sauce to caramelize a little bit.
Remove the entire rib rack from the smoker, and bring it over to a foil pan. Let them sit, and then serve.
