Shamrock Ice Cream Cake

March 17th is right around the corner, and this Shamrock Ice Cream cake is the perfect recipe for a St. Paddy's Day party. And with warmer weather on the way, it also has a good chance of becoming your go-to dessert for any kind of get-together. It's so easy to make that it's basically impossible to screw up—although it can get a bit messy. And we know not everyone is a fan of mint chocolate chip ice cream (although we don't fully understand why), so if you prefer other flavors, simply substitute your favorite one to make your own custom cake. So strap on your apron and let's get started.

 12 ice cream sandwiches, vanilla
 2 pt mint chocolate chip ice cream, softened
 18 oz container of whipped topping
 12 thin mint girl scout cookies, crushed
 2 tbsp chocolate syrup

Line an 8×8 or 9x9 baking dish with aluminum foil, letting the edges of the foil drape over the sides of the dish.

Fill the dish with a layer of ice cream sandwiches, using half-pieces if necessary.

Cover that layer of ice cream sandwiches with a pint of the mint chocolate chip ice cream.

Add another layer of sandwiches on top of that, and then another layer of ice cream.

Freeze the dish for about an hour. When frozen firm, turn the dish over onto a serving platter and remove the foil covering.

Mix the crushed cookies into the whipped topping to create your frosting, then slather it onto the cake.

Garnish with more crushed (or whole) cookies and chocolate syrup. Serve immediately, and enjoy!
