Red Velvet Waffles

Valentine's Day is just a few days away, and if you're looking for a gift that's a little more thoughtful (and budget-friendly) than more jewelry or another tie, might we suggest some delicious homemade breakfast? This recipe combines two favorites: the crispy Belgian waffle and fluffy red velvet cake. They're made with just a handful of ingredients that you probably already have in the kitchen, with one surprise addition—greek yogurt—that adds an extra level of moisture and healthiness to the recipe. The only specialized appliance you'll need is, you guessed it, a waffle maker.

 2 eggs
 1 ½ cups skim milk
 ½ cup plain greek yogurt
 2 cups all purpose flour
 1 ½ tbsp baking powder
 ¼ tsp salt
 4 tbsp brown sugar
 2 tbsp melted butter
 2 tbsp unsweetened cocoa powder
 4 tsp red food coloring

Turn on your waffle maker to get it preheated while you prep the other ingredients. Whisk the eggs, milk, and Greek yogurt together in a medium bowl.

In a large mixing bowl, combine the flour, baking powder, cocoa powder, salt, and sugar.

Mix the melted butter into the liquid mixture, then pour the liquids into the dry mixture. Whisk the mixture lightly until it’s combined and smooth.

Add in the red food coloring.

Spray your heated waffle maker with non-stick cooking spray and pour 1/2 cup batter per each waffle.

When waffles are done cooking, place them on a cooling rack.

Serve waffles topped with your choice of ice cream, melted chocolate, syrup, whipped cream, powdered sugar, or whatever garnishes your heart desires. Enjoy!
