For a fun main course, this heavenly cheesy Guinness Mac n' Cheese is just perfection! Combining that creamy Guinness texture into this gooey classic just elevates those traditional flavors. Overall this is just a really good Mac n' Cheese recipe, if you aren't going to try it for St. Paddy's day I would suggest any day really!
Boil elbow noodles in salted water and cook until done. Before draining the pasta, reserve 1 cup of pasta water and set aside. While pasta is cooking, prepare the topping and cheese sauce.
In a medium skillet melt butter over medium heat. Add garlic and breadcrumbs, cook until toasted and fragrant. Salt and pepper to taste, set aside.
In a large saucepan melt butter over medium heat. Sprinkle in the flour and whisk together. While whisking pour in Guinness, milk, half and half, salt, pepper, and Dijon mustard. Bring mixture to a simmer while whisk frequently until thickens slightly. This takes several minutes.
Once thickened add cubed cream cheese and 2.5 cups of the grated cheddar, stir until smooth. Add cooked pasta into the mixture and combine.
Add remaining 1 cup of grated cheddar and stir until completely melted. If the mixture is too thick add some reserved pasta water to thin.
Put Mac & Cheese in a serving bowl and sprinkle with topping and enjoy!
