Here is a fun twist on a summertime favorite, Grilled Pineapple Lemonade. Adding the pineapple gives the drink a more complex flavor and softens the sour flavor profile that can sometimes be overwhelming. As an added twist, grilling the pineapple lends a slightly smokey taste, making it an ideal mixer for a tequila or mezcal-based adult concoction.
Heat your grill to about 400 degrees.
Cook pineapple until dark char marks appear. Set aside to cool.
Use a stovetop or electric kettle to heat up water. In a pitcher, combine sugar and hot water, stir until sugar dissolves.
Place grilled pineapple and the juice from 4 lemons into a blender. Blend until smooth.
Pour pineapple mixture through a fine-mesh strainer into the pitcher with the sugar mixture.
Stir until well blended, add ice and enjoy!
