Instant Pot Chocolate Lava Cakes

This recipe is wonderful for Valentine’s Day and great for anyone who is a chocolate lover. The Instant Pot is amazing to use with this recipe. These lava cakes only need 9 minutes to cook! It makes this recipe so fast and easy, you could make these anytime you wanted! Plus, this recipe makes four lava cakes, which is perfect for a couple or a group of friends.

 1 tbsp granulated sugar
 ½ cup butter
 4 oz semi-sweet chocolate, chopped
 1 cup confectioner's sugar
 2 eggs
 2 egg yolks
 1 tsp instant coffee
 1 tsp vanilla
 6 tbsp all-purpose flour
 ½ tsp salt

Grease the bottom and sides of four 6 oz ramekins. Lightly coat with granulated sugar.

In a medium-sized, microwave safe, bowl microwave butter and chocolate for 1 minute. Stir and continue microwaving at 15 minute intervals until chocolate and butter has melted and is smooth.

Whisk in the confectioner's sugar.

Next, whisk in both eggs and egg yolks, coffee and vanilla. Stir until combined.

Lastly, whisk in flour and salt and stir until combined. Once the batter in done, pour the batter into each prepared ramekin.

Pour about 2 cups of water into the Instant Pot's main compartment (inner pot) and place the trivet in the water.

Place the ramekins on the trivet, if using a 8 Qt. Instant Pot place three ramekins on the trivet and bake, cook the last one separately or you can do two batches of two ramekins. Close the Instant Pot, make sure the steam release handle is in the "Sealing" position.

Cook on "Manual" or "Pressure Cook" for 7 to 9 minutes. Once the Instant Pot is pressurized the float valve will go up. The display will count down from 9 to 0, once it's done cooking it will automatically go into "Keep Warm" mode and display "L0:00"

Do a "Quick Release" of the steam by placing a folded towel over the steam release handle and move it to the "Venting" position. Remove the towel after turning the knob. When your Instant Pot is depressurized, the float valve will be in the down position.

Press "Cancel" when it's done and open your Instant Pot. Lift the trivet out of the main compartment to remove the ramekins, place the ramekins on a cooling rack to cool before serving.
