 1 cup Instant Rice
 1 cup Water
 Juice of One Lime
 1 lb Chicken Breast
 1 Packet of Taco Seasoning
 ¼ cup Cilantro, Chopped
 1 Head of Lettuce, Chopped
 1 cup Diced Tomatoes
 1 cup Guacamole
 1 Can of Black Beans, Drained
 1 cup Corn (Frozen or Canned/Drained)
 ½ Red Onion, Chopped
 ½ cup Mexican Cheese

Preheat your your air fryer to 400°F.

Chop your cilantro, lettuce, tomatoes and onion.

Drain your black beans and drain/thaw your choice of frozen or canned corn.

Use the taco seasoning to season both sides of the chicken breasts.

Put the chicken in your air fryer and cook one side for four minutes. Flip the chicken breasts over and cook for an additional four minutes.

Cut your cooked chicken into strips.

Pour your instant rice and water into a microwave-safe bowl and cover it with plastic wrap.

Microwave your rice for 6 minutes, let it sit and cool for five minutes, then stir.

Toss your cooked rice in lime juice and chopped cilantro.

Add your chicken, lettuce, tomatoes, guacamole, black beans, corn, onion and Mexican cheese to the rice.

If you're looking for even more flavor, add optional toppings like jalapenos, salsa, sour cream, etc.
