Who doesn't love a filling meal that's packed with lots of different menu items, like Thanksgiving Dinner or a big breakfast spread? You know, a plate heaping over with eggs, veggies, hash browns, and maybe some ham or sausage, served with a side of pancakes. There's something comforting about all of those hearty foods in front of you, ready to eat, especially to start off a lazy Sunday. And everyone knows there's two ways to eat a meal like that: finish off each menu item completely before moving on to the next, or getting a bit of each of them in every forkful. If you're the type that loves the mixing of tastes, then this Cheesy Egg & Hash Brown Waffle recipe is perfect for you. And not only does it taste amazing, it's easier to cook than preparing each item individually. So fire up that waffle maker, and get ready to experience your new favorite breakfast meal.
Prep your waffle maker by preheating it to medium to high. Coat both sides with cooking spray or melted butter—the spray will be quicker, but the butter will give it some extra taste.
In a mixing bowl, whisk together the eggs and milk.
Stir in the shredded potatoes, cheese, chives, salt, and pepper, along with any other ingredients you choose to add. Mix thoroughly.
Scoop about 1 cup of the mixture onto the waffle maker, and spread it evenly to the edges. Sprinkle with your toppings, we are using: olives, green peppers, and ham.
Close the waffle maker and cook the mixture for about five minutes. Check once or twice to make sure there is no burning. Cook until the entire waffle is golden brown in color.
Gently remove the waffle with a fork or tongs.
Serve with sour cream or ketchup, and enjoy!
