Buffalo Chicken Sliders

There are certain traits we love finding in any recipe. Among them, we're always on the lookout for a dish that's easy to make, one that tastes great with simple ingredients, something that's shareable, and something that works as a meal or just a halftime snack. Our favorite recipes—like the mini quiches or pizza bombs—check all of those boxes. And so do these Buffalo Chicken Sliders. By using pre-made dinner rolls and rotisserie chicken, most of the work is already done for you, so a quick stop at the grocery on the way home is all you'll need to be ready to make them. Or if you've got some chicken breasts in the fridge (and the time to cook 'em), you can use those in place of the rotisserie chicken.

 12 mini buns
 1 rotisserie chicken shredded
 ½ cup buffalo wing sauce
 2 tbsp ranch seasoning, divided
 2 cups mozzarella cheese
 ½ cup ranch dressing
 2 tbsp butter, melted
 cooking spray

Pre-heat your oven to 350 degrees and spray a 13×9 baking dish with cooking spray.

Using a serrated knife, slice the mini buns in half (without separating them) so there is a sheet of bottoms and a separate sheet of tops.

Place the bottoms into the pan and bake for 5 mins.

While bottoms are toasting, peel all of the rotisserie chicken off of the bones and place it into a bowl. Use a hand mixer set to medium to shred the chicken.

Mix together shredded chicken, buffalo sauce, and 1 tablespoon of ranch seasoning.

In a separate bowl, melt butter and add 1 tablespoon of ranch seasoning.

Once bottoms are done baking, spread a thin layer of ranch dressing over them.

Then top the bottoms with the chicken mixture and then sprinkle that with cheese.

Place the sheet of bun tops onto the sliders and brush the ranch-butter mixture on top of all the buns.

Bake for 10-15 mins, enjoy while warm!
