Recipes

Using your Vitamix blender makes prepping and cooking a breeze. Cut down on the chopping and mixing, and let your Vitamix do the work. Here are a couple of recipes from Vitamix that you can try out! It’s simply fast and delicious cooking done right!

Roasted Red Pepper Hummus Container_Low_Profile_Spread_Hummus_Red_Pepper_Kitchen

What you will need:

  • 1/2 cup (120 ml) water
  • 6 ounces (170 g) roasted red pepper
  • 2 Tablespoons (30 ml) olive oil
  • ½ cup (120 g) tahini paste
  • 2 ½ Tablespoon (38 ml) lemon juice
  • 2 (6 g) garlic cloves, peeled
  • 1 teaspoon hot sauce
  • 3 cups (720 g) canned garbanzo beans, drained
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Directions:

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute using the tamper to press the ingredients into the blades, or until smooth. Add additional water if necessary to keep mixture flowing freely through blades.

*This recipe has been written for the C-Series and G-Series machines with Variable Speed control and 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

Cream of Asparagus Soup750_Soup_Asparagus_Kitchen

What you will need:

1 1/2 pounds (680 g) asparagus spears, cooked (reserve one cup pieces for garnish)

  • 1 1/2 cups (360 ml) chicken broth
  • 1/2 cup (120 ml) half and half
  • Salt and ground black pepper, to taste

Directions:

  1. Place asparagus and chicken broth into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 6 minutes or until hot. Reduce to Variable 2; remove lid plug.
  5. Add half and half through the lid plug opening. Blend for 10 seconds.
  6. Season with salt and pepper and serve over reserved asparagus spears.

*This recipe has been written for the C-Series and G-Series machines with Variable Speed control and 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

Peach Sorbet

  • 3 fresh peaches, ripe, halved, pitted
  • 1/2 teaspoon vanilla extract
  • 3/4 cup (150 g) granulated sugar or other sweetener, to taste
  • 4 cups (960 ml) ice cubes

Directions: 

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 30 seconds, the sound of the motor will change and four mounds should form.
  5. Stop machine. Do not over mix or melting will occur. Serve immediately.

* This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
