      2. Spread the outside of each slice of bread with a light coating of
      mayonnaise.
      3. Lay mayonnaise side of bread face down in pan/on griddle. Place the
slices of cheese on top. Place 2nd piece of bread on top of cheese with
      mayonnaise facing out.
      4. Grill on medium/low heat until golden brown and cheese is melted.

      Tomato Basil Soup
      Ingredients:
1/3 cup of Extra Virgin Olive Oil
5 Carrots, peeled and diced small
1 Large yellow onion diced small
      1 Tbsp. Dried Basil
3 28 oz cans of Whole San Marzano tomatoes in puree
      1-14 1/2 oz Low-sodium chicken stock
2 cups of Heavy whipping cream
      To taste, Kosher salt
      To taste, Pepper
2 Tbsp. Lightly packed basil leaves, cut into ribbons

      Directions:
      1. In a 6-8 quart saucepan over medium heat, warm the oil and swirl to
coat the bottom of the pan. Add the carrots, onion, dried basil and
sauté, stirring occasionally until softened. 10-12 mins.
      2. Add the tomatoes, including the puree, and the broth and bring just to a
boil. Reduce the heat to low, and simmer, uncovered, for 20 minutes to
      blend flavors.
      3. Remove the soup from the heat. Puree the soup in the saucepan using
an immersion blender, or, working in batches in a blender or food
processor fitted with a metal blade.
      4. Return the pureed soup to the saucepan, add the cream and place over
medium heat. Warm until heated through. Season with salt and
      pepper.
      5. Ladle the soup into bowls and garnish with the basil ribbons.
