Abt-solutely Delicious: St. Paddy’s Day Edition

There’s a little bit of Irish in everybody on St. Patrick’s day. For some it’s a time to don your green clothes, grab a pint, and hit the parade. For others, it’s a chance to host a party with friends and family. We’ve assembled three delicious dishes that highlight the almighty Guinness draught beer that are perfect for your St. Paddy’s day festivities. Not just a favorite drink on the holiday, the malty flavor imported from Ireland is also versatile ingredient when used for cooking.

While most will be drinking the delicious pint of the gods, you can curb their munchies with some Guinness-inspired snacks. These snacks won’t leave you like a blind cobbler’s thumb, and it has been shown that Guinness is good for you, in moderation. A robust barbecue sauce whose tantalizing flavors will pair with the meat of your choice. This barbecue sauce is perfect for the next time you fire up that grill! Using the rich malty flavor of Guinness and tangy taste of apple cider vinegar, this sauce is the perfect balance that everyone loves in their favorite BBQ recipes.

Yields12 Servings

 1 cup ketchup
 1 cup apple cider vinegar
 11.20 fl oz bottle guinness draught
 1 ½ cups dark brown sugar
 ½ tsp salt
 ½ tsp fresh ground pepper
 ½ tsp garlic powder
 ½ tsp onion powder
 ½ tsp chipotle chili powder

Put all ingredients into a medium saucepan, bring to a boil.

Once boiling, reduce heat and simmer for 30-40 mins.

Use on your favorite meats and recipes immediately or store in an air tight container, inside the refrigerator.

Guinness Barbecue Sauce

For a fun main course, this heavenly cheesy Guinness Mac n' Cheese is just perfection! Combining that creamy Guinness texture into this gooey classic just elevates those traditional flavors. Overall this is just a really good Mac n' Cheese recipe, if you aren't going to try it for St. Paddy's day I would suggest any day really!

Yields12 Servings

Mac & Cheese
 1 lb macaroni noodles
 2 tbsp butter
 2 tbsp flour
  cup guinness
 5 ½ cups milk
 ½ cup half and half
 ½ tsp salt
 ¼ tsp ground black pepper
 1 tbsp dijon mustard
 2 oz cream cheese, cubed
 15 ½ cups grated irish cheddar cheese, divided
Topping
 1 tbsp butter
 2 tsp minced garlic
 ½ cup panko breadcrumbs
 pinch of salt
 pinch of pepper
 2 tsp minced fresh parsley

Boil elbow noodles in salted water and cook until done. Before draining the pasta, reserve 1 cup of pasta water and set aside. While pasta is cooking, prepare the topping and cheese sauce.

Topping

In a medium skillet melt butter over medium heat. Add garlic and breadcrumbs, cook until toasted and fragrant. Salt and pepper to taste, set aside.

Cheese Sauce

In a large saucepan melt butter over medium heat. Sprinkle in the flour and whisk together. While whisking pour in Guinness, milk, half and half, salt, pepper, and Dijon mustard. Bring mixture to a simmer while whisk frequently until thickens slightly. This takes several minutes.

Once thickened add cubed cream cheese and 2.5 cups of the grated cheddar, stir until smooth. Add cooked pasta into the mixture and combine.

Add remaining 1 cup of grated cheddar and stir until completely melted. If the mixture is too thick add some reserved pasta water to thin.

Put Mac & Cheese in a serving bowl and sprinkle with topping and enjoy!

Guinness and Irish Cheddar Mac & Cheese

This recipe is so much fun because it's the best of both worlds, having dessert and drinking a beer! Guinness is such a delicious chocolatey and creamy beer, pairing it with chocolate ice cream just makes it that more descendant. The perfect adult dessert to finish off a great St. Paddy's Day!

Yields2 Servings

 4 large scoops chocolate ice cream
 2 tsp chocolate extract
 2 tsp chocolate syrup
 6 fl oz guinness draught, cold

Grab two glasses and an ice cream scooper. Scoop 2 large scoops of ice cream into each glass.

Add 1 teaspoon of chocolate extra and 1 teaspoon of chocolate syrup into each glass.

Pour half a can of Guinness into each glass, make sure to pour slowly. Stir while pouring if desired.
