Spicy, cheesy and the right amount of sweet! These spicy barbecue chicken quesadillas are super easy to make–thanks to a busy schedule’s best friend, rotisserie chicken. There will be nights where I’ll scoop up a rotisserie chicken from a local grocery store for dinner, and whip up some sides to go along with it. But with the leftovers, the possibilities are endless! You can make some shredded chicken nachos, chicken noodle soup, tacos and more! But in this case, we will be making chicken quesadillas. They can be made for a snack, for lunch or for dinner! Because this recipe is just that simple! Enjoy!
Ingredients
3 cups of shredded Rotisserie Chicken
Flour Tortillas
Shredded Cheese (Mexican Blend, or Mozzarella)
Green Onions
Cooked Corn Niblets
Sweet Baby Ray’s BBQ Sauce or any BBQ Sauce
Sriracha Hot Chili Sauce
Directions
1) In a large bowl, mix together your shredded chicken, green onions, Sriracha, BBQ sauce and corn niblets. Make sure all the chicken is coated. Set aside.
2) Heat your sandwich grill or panini press. (If you are using a skillet, be sure to coat your pan lightly with some cooking spray.)
3) Lay down one tortilla, sprinkle cheese then spoon on the chicken mixture. Spread it evenly around the tortilla. Then top the chicken with a generous amount of cheese and place another tortilla on top. Close the press or grill until the quesadilla is slightly brown. Repeat for however many quesadillas you want.
