Abt-solutely Delicious: Friendsgiving Edition

Sharing a delicious Thanksgiving meal with friends outside of your traditional family Thanksgiving is a growing trend. Let’s be honest, no matter if it’s your third time attending a “Friendsgiving” or your first time hosting one, you’re probably on the lookout for some delicious Friendsgiving dishes to win your friends over with this year! Well, you’ve come to the right place because we’ve compiled a list of extremely quick and easy Friendsgiving recipes to whip up, all you’ll need is a cast iron skillet! We’re kidding, you’ll need more than just a skillet – ingredients and certain kitchen tools will be necessary. However, the point is that the following recipes are all made to be served out of a cast iron skillet! So find yours at home or grab a skillet from us and let’s get started.

Skillet Cornbread

Cornbread is the perfect addition to any Friendsgiving feast! This sweet and salty side pairs well will all the traditional Thanksgiving foods. 

Friendsgiving Recipe - Skillet Recipe

Yields1 Serving

 1 cup yellow cornmeal
 ½ cup all-purpose flour
 1 tsp salt
 1 tbsp baking powder
 1 cup buttermilk
 ½ cup milk
 1 egg
 ½ tsp baking soda
 ¼ cup plus 2 tbsp shortening

Preheat oven to 450 degrees. Combine cornmeal, flour, salt, and baking powder in a bowl. Stir.

Measure the buttermilk and milk in a measuring cup and add the egg. Stir it together with a fork. Add the baking soda and stir again. Pour milk mixture into the dry ingredients. Stir with a fork until combined.

In a small bowl, melt 1/4 shortening. Slowly add melted shortening to the batter, stirring until just combined. In a cast iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet. Spread to even out the surface (batter should sizzle).

Cook on stove-top for 1 minute, then bake for 20 to 25 minutes or until golden brown.

Ingredients

Skillet Cornbread

Crispy Prosciutto-Wrapped Asparagus

This appetizer is so easy to make, its literally two ingredients. It's the perfect, "I completely forgot I was supposed to make something" appetizer. 

Yields6 Servings

 24 medium asparagus spears, ends trimmed
 1 tbsp olive oil
 pinch of salt
 pinch of pepper
 12 slices prosciutto, cut in half

Heat the oven to broil and arrange a rack about 5 to 6 inches below the heating element.

Set a large plate aside. Place the asparagus in a 12″ cast iron skillet, drizzle it with the olive oil, and season with salt and pepper. Using your hands, toss until the spears are evenly coated with the oil. Transfer them to the large plate and set the skillet aside. Starting just under the scaled tip of the asparagus, wrap each spear with 1 slice of prosciutto in a downward spiral toward the cut end, just barely overlapping the seams of the prosciutto. Place back onto the skillet.

Repeat with the remaining asparagus, leaving as much space as possible between each spear.

Broil for 3 minutes, remove the skillet from the oven and flip the asparagus over. Return to the oven and continue to broil until the asparagus is charred in spots and the prosciutto is crisped and browned, about 3 minutes more.

Everyone loves chocolate chip cookies, and what could be better than a giant one! This is just a classic chocolate chip cookie but with a new look.

Friendsgiving Recipe - Chocolate Chip Skillet Cookie

 1 cup butter
 1 cup brown sugar
 ½ cup sugar
 2 eggs
 1 tsp vanilla
 2 cups plus 2 tbsp flour
 1 tsp baking soda
 ½ tsp salt
 ¾ cup milk chocolate chucks
 ¾ cup semi-sweet chocolate chips

Preheat oven to 325 degrees.

In a 10 or 12 inch cast iron skillet, melt butter over medium heat stirring often, until it starts to bubble and is completely melted. Turn heat to low and add sugar and brown sugar, stirring well. Keep stirring until smooth and glossy. Chill for 10-15 minutes (you don’t want to add the eggs now or you will have scrambled eggs).
