This recipe is wonderful for Valentine’s Day and great for anyone who is a chocolate lover. The Instant Pot is amazing to use with this recipe. These lava cakes only need 9 minutes to cook! It makes this recipe so fast and easy, you could make these anytime you wanted! Plus, this recipe makes four lava cakes, which is perfect for a couple or a group of friends.

First, butter your 6 oz ramekins and lightly sprinkle granulated sugar on top. Next, melt your chocolate and butter in a medium bowl in the microwave. Microwave for one minute and then stir, and if the chocolate has not melted continue microwaving at 15-second intervals until chocolate and butter have both melted and the combo is smooth.

Once your chocolate and butter are melted, you are going to whisk in each ingredient. First, add the confectioner’s sugar, and whisk the batter until combined. Next, add both eggs and egg yolks, then the instant coffee and the vanilla. Lastly, add in the flour and salt, and stir once more to make sure the batter is mixed evenly.

Once the batter is thoroughly mixed, pour the batter into each ramekin. Try to distribute the batter to get the same amount in each ramekin for an even bake.

Pour 2 cups of water into the Instant Pot’s main compartment, and place the trivet in the water. Place the ramekins into the Instant Pot. We used an 8 Quart Instant Pot and could only fit three and baked one separately. You could also do two batches of two ramekins.

After placing the ramekins into the Instant Pot, close the lid and make sure the handle is in the “Sealing” position. Set to “Presser Cook” and time for 9 minutes. When the Instant Pot is pressurized the float valve will go up and the display will count down from 9. When it is done cooking the Instant Pot will automatically go into “Keep Warm” mode.

Before opening you need to do a “Quick Release” of the steam by moving the steam handle into the “Venting” position. Press “Cancel” and open your Instant Pot. Lift the trivet out of the main compartment to remove the ramekins, place on a cooling rack for about 3 minutes before serving.
