Abt-Solutely Delicious: Mango Guacamole

Saturday is Cinco de Mayo, and the Kentucky Derby, and, well, Saturday, which means you’ve got three reasons to party. Before you start setting the snack table with jars of store-bought dips, consider this flavorful guacamole recipe. It’s super easy to make—skipping the mortar and pestle in favor of a blender—and the addition of fresh mango sets it apart from anything you’ll find on the store shelves. And, like any great recipe, it’s easily modifiable. Feeling a little sweet? Throw in some pineapple chunks as well. Maybe you like it a little hot. If so, sub in some serranos or habaneros in place of the jalapeno peppers. Whichever way you go, it’s hard to go wrong with some chips, guacamole, and a couple cervezas on a beautiful spring day. 

Mango Guacamole

  1. 2 cups cilantro
  2. 1/4 red onion diced
  3. 2 tablespoons fresh lime juice about 1 large lime
  4. 1 clove garlic
  5. 1 medium jalapeno with or without seeds, your choice
  6. 1 teaspoon salt
  7. 2 large ripe avocados pitted and peeled
  8. 1 mango diced
  1. Place cilantro, half of your diced red onion, lime juice, garlic, jalapeno, and salt into blender or food processor.
  2. Blend for about 1-2 minutes (occasionally scraping the sides of the container with a spatula) or until the ingredients become a smooth paste.
  3. Add the avocados and pulse about 8-9 times, removing the lid and running spatula down the sides after every few pluses. Stop blending when you have a smooth mixture with some small avocado chunks. Pour the guacamole into a bowl.
  4. Dice the mango, and add it and the remaining diced red onion into the guacamole. Use a spatula mix to combine. Serve with your favorite tortilla chips.
