game-time-bites

We’re still a few weeks away from the biggest event in football, but we all know throwing a party is a must. Sunday’s game will be filled with non-stop football action, your friends and family, and of course, food. Because there isn’t a party without the food! To help keep you from missing any of the day’s festivities, we came up with some easy recipes so you can spend less time cooking and more time enjoying the game!

Big Game Pan Nachos

These Nachos are a combination of crunchy and soft, and sure to be a gametime favorite!

INGREDIENTS

  • large baking pan (we used 18 x 13)
  • Parchment paper
  • 1 lb ground beef (can substitute chicken ground turkey or pork)
  • 1 package of taco seasoning
  • 1 bag of tortilla rounds 13 oz
  • 1 can of refried beans 16 oz
  • 12 oz shredded Mexican blend cheese
  • 1 head of lettuce chopped ( can also buy a bag of shreds lettuce)
  • Jalapeño peppers (hot or mild)
  • 4 medium sized plum tomatoes chopped
  • ¼ cup chopped cilantro
  • ½ cup white onion chopped
  • Salt and pepper to taste
  • Dash of cumin
  • 1/2 of lime for juice
  • 2 Avocados cubed
  • 1 to 1 ½ cups sour cream

To make the Pico de Gallo

Mix chopped tomatoes, white onion, and cilantro together in a bowl. Add salt, pepper, cumin and lime to taste. Set aside

Directions

Brown ground beef in a 10-inch or larger skillet over medium heat, drain, add package of taco seasoning and water (follow directions of taco seasoning package to complete this step)

Line the baking pan with parchment paper and spread tortilla rounds across the pan, spread the refried beans onto the tortilla chips (you don’t have to cover all the chips or use all the beans) some chips should be left uncovered for crunch.

Top chips and beans with all the ground beef then completely cover with cheese.

Preheat oven to 350° F and place the meat and chip mixture into the oven for 5 minutes or until cheese is melted. Remove from oven (you only have to heat the nachos in the oven to melt the cheese so keep an eye on it!)

Remove from oven and place on a heat safe surface (Be careful the pan will be hot!)

Spread a layer of sour cream over the melted cheese, then cover the nachos with chopped lettuce, and add a layer of Pico de Gallo, Avocado and jalapeno peppers.  Enjoy!

Chunky Guacamole – Recipes For The Big Game

Monday, January 26th, 2015

Tired of being told the Guac costs extra? Make your own with this simple recipe that comes to us from the culinary experts at Cuisinart. It’s quick to prepare and uses fresh ingredients, making it a great alternative to less-healthy dips from off the store shelf.

Some tips: For the best taste, make sure your avocados are ripe. A ripe avocado will be very dark green (almost black) in color and will be just slightly soft—enough to yield under firm pressure. If you’ll be doing your shopping a few days ahead of your party, pick out avocados that are firm to the touch and let them ripen in your kitchen.

  2. Add onion and cilantro and pulse 5 times to chop. Scrape everything back down the sides of the bowl.
  3. With food processor off, scoop out insides of avocados in pieces directly into the bowl.
  4. Add lime juice and salt. Pulse food processor until the guacamole is at your desired consistency, which should be about 10 to 15 pulses.

Perfect Pass Pulled Pork

Monday, January 27th, 2014

Take the tailgate indoors with this perfect pulled pork recipe.

This recipe takes a little more work than the previous ones, but the reward of perfect pulled pork sandwiches is definitely worth it. And since it also utilizes a slow cooker, once you get the ingredients cooking you can head back to the pregame festivites. It comes from Emily, our Media Coordinator.

pulled pork 650

Perfect Pass Pulled Pork Sandwiches

Prep Time:  30 Minutes

Cook Time:  6-8 hours

Ingredients:

2 medium yellow onions, thinly sliced

1 boneless pork shoulder (3 to 4 lbs) with excess fat trimmed

1 cup chicken stock or  chicken broth

1 tablespoon brown sugar

1/2  tablespoon chili powder

1/2 tablespoon paprika

1 tablespoon kosher salt

1/2 teaspoon ground cumin

1/4 teaspoon ground cinnamon

2 cups of your favorite barbecue sauce

Potato buns, Hawaiian Bread or your favorite rolls

Directions:

Layer bottom of slow cooker with sliced onions, cover with broth.

Mix sugar and all spices, rub into pork.

Place pork into slow cooker, cover and cook until tender enough to fork shred.

Remove pork, place on cutting board and shred into uniform pieces.

Remove onion/juice mixture from slow-cooker. Strain juice from onions and return them to slow cooker. Save liquid (optional).

Place shredded pork back into slow-cooker and add barbecue sauce

Tips:

If you prefer pulled pork with less of a BBQ sauce taste, simply re-add some broth after shredding the pork. This will keep the pork moist.

Give guests a choice of BBQ sauces or the original cooking broth.

Offer a choice of rolls. We love Hawaiian bread.

Serve with coleslaw or potato salad.
