Ginger Molasses Cookies

 

One of the best things during holiday season is the sweet aroma of baked goods, especially cookies! That's why we decided to make this week's Holiday Edition of Abt-solutely Delicious all about cookies. You can bring these soft and chewy ginger molasses cookies to your annual cookie exchange with friends or to holiday dinner with family, they're perfect for any occasion.

Yields1 Serving
 ¾ cup unsalted butter, softened
 1 cup granulated sugar
 ¼ cup molasses
 1 egg
 2 cups all-purpose flour
 1 tsp baking soda
 ¾ tsp ground cinnamon
 ½ tsp ground cloves
  tsp ground nutmeg
 ½ tsp ground ginger
 ½ tsp salt
 ¼ cup granulated sugar, for rolling

Preheat oven to 375 degrees F.

Line cookie sheet with parchment paper and set aside.

Using a stand mixer, beat room temperature butter for 30 seconds. Add sugar and beat for 3 mins, until light and fluffy.

Add egg and molasses and beat again on med.- low speed, until combined.

In a medium mixing bowl, combine dry ingredients: flour, baking soda, cinnamon, cloves, nutmeg, ginger, and salt.

Gradually add dry mixture to wet (sugar and molasses) mixture, beat on low until combined.

Add 1/4 cup sugar to a small bowl. Scoop about 1-1/2 tablespoons of cookie dough, form into a ball and roll in sugar until evenly coated.

Place each dough ball onto cookie sheet, evenly spaced 2″ apart

Bake for 9-11 minutes or until bottoms are golden brown.

Let cookies cool on cookie sheet before transferring to a cooling rack.
